Maize or corn is one of the most important crops in the Americas; it was domesticated by the indigenous people of Mesoamerica and had spread through much of the continent by 2500BC. Many colorful varieties are grown in the Andes, this image shows a selection being dried on straw after harvesting in the Sacred Valley near Cusco, Peru.
