Description
Pasankalla (often written pasancalla) is a maize base sweet that is very popular in Bolivia and also eaten in neighboring countries. It is similar to popcorn but made from a type of corn called p’isanqella which has much larger cobs and whiter kernals than the corn used in the USA. It is heated with sugars and other sweeteners in large metal pans, production is mainly small scale by families. Colourings (often very bright such as here) are commonly added especially for the Todos Santos / Day of the Dead festival, pasankalla is an essential decoration and food for the altars that are made on November 1st to receive the souls of the dead.
